Fermented out quickly to 16% abv
Back-sweetened with Hawaiian coffee honey, imparting subtle chocolate notes to balance the complexity, particularly a hint of Eucalyptus.

Luis’ notes - 2020 Dry mead (on the sweeter side of dry)
Fermented out to 17% abv
Cotes des Blanc yeast enhanced the fruity esters and the yeast loved this honey that fermented out more quickly than usual
Dry meads have some lingering astringency that some new mead drinkers find harsh (depending on what the bees were collecting) but this one was surprising low in astringency
The source honey was well-rounded, resulting in a milder astringency that blends well with the heat of the higher abv
