Luis’ notes - 2020 Semi-sweet mead

    Bountiful complex notes in the source honey

    Fermented out quickly to 16% abv

    Back-sweetened with Hawaiian coffee honey, imparting subtle chocolate notes to balance the complexity, particularly a hint of Eucalyptus.

o    Bottle #2 - Honey collected from the Sakkas’ backyard (Periwinkle Palace!)

Luis’ notes - 2020 Dry mead (on the sweeter side of dry)

    Fermented out to 17% abv

    Cotes des Blanc yeast enhanced the fruity esters and the yeast loved this honey that fermented out more quickly than usual

    Dry meads have some lingering astringency that some new mead drinkers find harsh (depending on what the bees were collecting) but this one was surprising low in astringency

    The source honey was well-rounded, resulting in a milder astringency that blends well with the heat of the higher abv
